While we’re on freshness, let’s talk about stems. Stems are a real problem for vegetables and fruit, as it’s one of the main ways that decomposition sets in. A lot of fruits – e.g. bananas – produce a gas called ethylene that helps them ripen, and the stem is one of the main production sites for this on a fruit. As such, covering up the stem of a banana, for instance, traps a lot of the ethylene gas in the stem, and stop an abundance of the gas from overripening it.
